Vegetarian Pasta

No, I’m not suggesting you serve tits and ass at your next BBQ (unless it’s that kinda party). We are talking tomatoes and avocados here people! It’s summertime, so make use of the fresh and very available Ts and As! Did I mention there’s bacon in this recipe, too?

1/2 lb rotini
1/2 c mayonnaise
Juice of a lemon
1/2 t salt
1/2 t garlic powder
1/4 t white pepper
1 t dried dill
1 c cherry tomatoes (halved)
1 avocado (cubed)
6 slices bacon (chopped)

1. Cook bacon until crisp. Transfer to a paper towel lined plate. Chop when cooled.
2. Cook pasta according to package directions. Strain and run under cold water until cooled.
3. In the meantime, whisk mayonnaise, lemon, salt, garlic powder, pepper and dill together in a bowl.
4. Stir pasta, cherry tomatoes and bacon into the dressing and toss to combine. Refrigerate for 30 minutes.
5. Add the avocado shortly before serving or your A will turn brown!
