Cavatappi Pasta w/ Prosciutto and Parmesan
Serves 4.

Tap this fun, twisty pasta tonight. If macaroni was a chick with a little wave in her hair, cavatappi would be a chick with gorgeous spiral curls!

This recipe is perfect for all of you sticking to your New Year’s resolution to slim down, by the way….only 313 calories per serving. Stupid quick and easy, too!!

1/2 lb uncooked cavatappi
Cooking spray
1 garlic clove (minced)
1 T finely chopped fresh parsley
2 T extra virgin olive oil
1/2 t salt
1/2 t ground black pepper
1 oz very thin slices prosciutto (cut into thin strips)
1 oz fresh Parmesan or Parmigiano-Reggiano cheese (shaved)

1. Cook pasta according to the package directions.
2. Drain in a colander over a bowl, reserving 3 tablespoons cooking liquid.
3. Heat pan over medium heat and coat with cooking spray.
4. Add garlic to pan and sauté for about a minute.
5. Remove from heat and add the reserved 3 tablespoons cooking liquid and pasta to pan; let stand 2 minutes.
6. Stir in parsley, oil, salt, pepper and prosciutto.
7. Sprinkle with shaved cheese and TAP THAT!!!!
