St. Paddy’s Drunken Fettuccine


It’s that time of year…when every Irish lad grabs a beer and a beautiful Irish lass. Well, might I suggest you also grab the ingredients for this delectable dish? I guarantee your St. Patrick’s Day will be a LUCKY one!

….so what are you waiting for ya little leprechaun? Start grabbing!!

1 lb fresh fettuccine
2 c cilantro leaves (stems removed)
3/4 c chicken stock
3 T butter
3 shallots (finely chopped)
1/2 c dark beer
Fresh pepper
1 c whipping cream

1. Boil 4 quarts of water.
2. In the meantime, combine the cilantro and chicken stock in a food processor and purée.
3. Melt butter in a large saucepan.
4. Add shallots and sauté for 3-4 minutes over medium heat.
5. Add beer and boil on medium-high heat for 5 minutes or until the mixture has reduced a bit (thickens).
6. Add cilantro mixture and reduce again.
7. Season to taste with salt and pepper.
8. Add whipping cream and reduce again – approximately 3-4 minutes over medium-high heat.
9. Lightly salt the boiling water and add fettuccine (cook time 3-4 minutes if using fresh pasta).
10. Combine and GET LUCKY!!!
