Gimme Gemelli

Gemelli pasta resembles two entwined lovers. Bold asiago cheese, fresh salty bacon and golden caramelized onions envelop each twist like they were created for each other. This Valentine’s Day, prepare this rich baked delight and pair it with a great bottle of Pinot Gris. Trust me….Cupid is sure to nail you with his arrow!

p.s. Fresh, quality ingredients are a must, especially if you’re trying to keep your Valentine past February 14!

Asiago Gemelli w/ Caramelized Onions & Bacon

8 oz gemelli pasta
8 oz asiago cheese (shredded)
1/2 medium onion (chopped)
4 slices bacon (chopped into 1/2 – 1 inch pieces)
2 T butter
3 T flour
3/4 c cow boob juice
Salt & pepper
1/8 c panko breadcrumbs

1. Cook pasta for 9-10 minutes in lightly salted water.
2. Fry bacon, drain on paper towels & chop (reserve drippings).
3. Sauté chopped onion in the bacon drippings for 10-15 minutes over a low flame, stirring frequently.
4. In the meantime, melt butter in a medium saucepan over low heat.
5. Slowly whisk flour into the butter until it thickens.
6. Slowly whisk in the boob juice (sauce will thin out, but still have weight).
7. Add salt, pepper and all but one ounce of the asiago cheese (reserve for top).
8. Toss the onions, pasta and bacon into the sauce and mix well.
9. Pour mixture into a 7″ x 11″ baking dish and top with panko breadcrumbs.
10. Bake at 400 degrees for 20 minutes, sprinkling the reserved asiago on top after 15 minutes. Then, you are just 5 minutes away from gemelli ecstasy!!!
